Lasagna Rolls

 
 
 

Ingredients

9 whole-wheat lasagna noodles

1 tsp olive oil

1/2 cup chopped onion

1 lb ground turkey breast

3 cups tomato sauce

1/2 cup sliced mushrooms

3 tbsp Italian seasoning

1/4 tsp ground black pepper

1/4 tsp garlic powder

6 cups chopped fresh spinach

2 cups fat-free ricotta cheese

1/4 tsp ground nutmeg

2 cups shredded mozzarella cheese

Instructions

  1. Follow instructions on box to prepare the noodles.

  2. Preheat oven to 375°F.

  3. Heat olive oil on skillet over medium heat.

  4. First, cook onion until it’s soft (about 2 min).

  5. Then, add turkey and cook for about 8 min.

  6. Last, add in tomato sauce, mushrooms, Italian seasoning, black pepper, and garlic powder – simmer for 2 minutes.

  7. On a bowl, mix the spinach, ricotta, and nutmeg.

  8. Arrange 3 noodles onto bottom of a greased 9x13 inch baking dish.

  9. Spread 1/3 of ricotta mixture, 1/3 turkey mixture, and 1/3 mozzarella on each noodle (repeat 2x).

  10. Bake for 25-30 minutes or until cheese melts.
