Enchiladas

 
 
 

Ingredients

16 oz. ground turkey

1 teaspoon ground chili powder

16 corn tortillas

1 cup reduced-fat cheese (4-cheese Mexican shredded cheese)

16 oz. green enchilada sauce (mild)

Cooking spray

Preparation

  1. Preheat oven to 375F

  2. Spray a skillet with nonstick cooking spray and brown the ground turkey and chili powder.

  3. Heat tortillas in another nonstick pan.

  4. Spray a 13 x 9 inch nonstick baking dish with the cooking spray.

  5. Fill each tortilla with turkey, 3 TB. Roll up and place side by side in the baking dish seam-side down.

  6. Pour sauce over top of enchiladas, then sprinkle cheese on top of that.

  7. Cover with aluminum foil. Bake at 375F for 25 minutes.
