Mango + Chicken Tostadas
Ingredients
2 cups shredded cooked chicken
1 cup mango (peeled, pitted and diced)
1/4 cup red onion (minced)
1/2 jalapeño pepper (seeded and minced)
1 tablespoon fresh cilantro (chopped)
2 limes (juiced)
2 tablespoons olive oil
1/8 teaspoon kosher salt
2 ripe avocados (halved, pitted, and peeled)
18 corn tostadas
Instructions
Combine chicken, mango, onion, cilantro, and jalapeño together in a bowl. Add half of the lime juice, olive oil, and salt over the chicken mixture and mix.
In another bowl, mash avocados with remaining lime juice from and salt to taste.
Top each tostada with a dollop of the avocado mixture and a dollop of the chicken mixture and place on a platter.
