Pepitas and Quinoa Salad
Ingredients
2 tbsp extra virgin olive oil
2 tbsp lemon juice
2 tbsp orange juice
1 whole avocado (divided, pitted, peeled and diced)
1/4 cup fresh parsley (stems removed)
1 garlic clove
1 head of butter lettuce (cut into pieces)
1 cup grape or cherry tomatoes (cut in half)
1/2 cup quinoa (cooked)
1 cup frozen shelled edamame (cook according to package directions)
1 tbsp unsalted pepitas
